Recipe’s have returned!!! Chicken & Dumpling’s will never be one of them, so don’t get too excited.
Last night, the Hunnay & I made Broccoli & Cheddar Soup together, from scratch. It has always been something we’ve wanted to try making, but couldn’t find the guts to stand up to some Panera Broccoli & Cheddar. We were wrong. Ate until we almost exploded. Joey was asleep within 30 minutes after he finished. (That is a bases loaded Home Run if you ask me… the Orioles were playing).
Shockingly, this is the easiest recipe ever.
2 tb. butter
1 med. onion (sweet)
2-3 stalks celery (chopped)
2 cloves fresh garlic (minced)
saute until tender, then ADD:
4 c. chicken stock
8-9 c. broccoli (chopped)
boil until tender, then mash the broccoli until it is in bite sized pieces. (We love broccoli, so we didn’t do as much mashing)
In a separate saucepan:
3 tb. butter
5 tb. flour
2 c. milk
4 c. sharp cheddar
cook butter & flour until melted, while whisking together. Slowly add milk, whisk & add cheese. Turn heat down to a simmer, cook until thickened and your cheese is no longer sticking to your whisk.
add to broccoli pot. Stir, boil, then let sit for 20 minutes, uncovered.
season with Salt & Pepper, serve with your favorite Crusty Bread. If you’re going to get really classy, why don’t you try a bread bowl. Then tell me about it in the comments below!

Kevin and I made Corn Chowder last night (Sunday) and watched the football game…..and he ALSO passed out about 30 minutes after consuming 2 servings of soup. LOL. Gotta love men.
yeah, that seems to happen to us all too often. I never know the outcome of games until the next day when we cook big warm fuzzy dinners!
